a simple roast filet for two; the direct way to a man’s heart
1lb beef fillet, trimmed
2T. olive oil
one heaping spoonful grainy mustard
one heaping spoonful horseradish
handful of roughly cracked pepper + sea salt
rosemary bashed with the back of a knife to release juices, if you like
mustard-cream jus
steak resting juices
one shallot, minced
one garlic clove, smashed and chopped
knob of dijon
half cup cream
heat a cast iron pan medium high. mix horseradish, mustard, olive oil, s+p (rosemary, if using). pre-heat oven to 400f. smear mixture all over fillet. heat 2T. oil + a knob of butter in your pan, and sear fillet for 5 minutes on each side until a nice crust has formed. roast in the oven until medium rare. allow to rest on a plate, covered, for 10 minutes.
meanwhile, saute shallot + garlic in the cooking juices from your fillet. add mustard + mix well. add cream + stir. cook on medium, stirring often, for 3 minutes or until slightly thickened.
serve sliced thinly with a simple salad of baby lettuces, cherry tomatoes, blue cheese, thick slices of raw red onion + balsamic. spoon warm jus over all, and eat until your heart’s content. then watch him try to keep his hands off of you, xo.
